Over Easy Eggs

Ingredients

  • 4 egg large
  • 2 tablespoons butter unsalted
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper coarse ground

Instructions

Over Easy Eggs:

  1. To a large heavy bottomed skillet (that you have a lid for) on medium heat, add the butter.
  2. Break the eggs one at a time into a small bowl, then gently add to the pan (this will prevent broken yolks and shell pieces in the pan).
  3. Cook for 1 minute (just when the edges of the eggs are turning white) then cover with lid and reduce heat to medium-low.
  4. For over easy eggs cook for 1.5-2 minutes covered.
  5. Carefully flip the eggs and season with salt and pepper.
  6. Cook for 30 seconds then serve immediately.

Over Medium Eggs:

  1. For over medium cook for 3 minutes covered.
  2. Carefully flip the eggs and season with salt and pepper.
  3. Cook for 30 seconds then serve immediately.

Over Hard Eggs:

  1. Cook for 4 minutes.
  2. Carefully flip the eggs and season with salt and pepper.
  3. Cook for 1 minute then serve immediately.
