Description
Paleo Avocado Chocolate Muffins use mashed avocado as a fat source combined with eggs, coconut sugar, raw cacao powder, and coconut flour to create a gluten- and dairy-free batter. Baking soda and lime juice provide leavening, while a pinch of sea salt balances flavors. Optional add-ins like chocolate chips, vanilla extract, espresso powder, or cinnamon can customize flavor depth.
The batter is processed until smooth for even texture, then baked in lined muffin tins. The muffins do not rise significantly but develop set, slightly crackled tops that indicate they are cooked through. The crumb is moist and dense from the avocado.
These muffins offer a chocolate-rich treat suitable for paleo diets, with a texture distinct from traditional wheat muffins due to the coconut flour and avocado base. Cooling before removing from liners helps maintain their shape and moisture.
Ingredients
- 2 avocado mashed (3/4 cup mashed, medium
- 3 egg large
- 1/2 cup coconut sugar
- 1/3 cup raw cacao powder or cocoa powder
- 1/3 cup coconut flour packed
- 1 1/2 tsp baking soda
- 1 tsp lime juice
- 1/4 tsp salt sea salt
Optional Add-ins:
- 1/3 cup chocolate chips
- 1 tsp vanilla extract pure
- 1 Tbsp espresso powder
- 1 tsp ground cinnamon
Instructions
- Preheat the oven to 350 degrees F and line a muffin tray with 7 papers
- Add all ingredients to a food processor (except for chocolate chips, if adding) and process until completely smooth. Stir in the chocolate chips.
- Fill the muffin papers ¾ of the way up (the muffins will not rise a lot) and bake on the center rack of the preheated oven 20 to 30 minutes (mine take 25 and I bake at elevation), until tops are set up and have cracks.
- Allow muffins to cool completely before peeling and eating.
