Satisfy your sweet tooth with our decadent Paleo brownies! These gluten-free, dairy-free, and refined sugar-free brownies are made with real food ingredients. They come out super fudgy, gooey, and chocolaty!

Ingredients
- ½ cup coconut oil melted
- 1 cup coconut sugar
- 1 cup chopped dark chocolate or chocolate chips
- 2 eggs
- 1 tsp vanilla extract
- 3 tbsp cocoa powder
- ¼ cup tapioca flour or arrowroot powder

Instructions
- First, preheat the oven to 350 degrees Fahrenheit. Add parchment paper to an 8-inch by 8-inch square pan.
- In a large mixing bowl, add the eggs and coconut sugar. Whisk vigorously (or use a hand mixer) for 2 to 3 minutes, until completely mixed.
- In a small bowl, combine the melted coconut oil and chopped chocolate. Stir until completely creamy. If needed, microwave for 15 seconds to melt the chocolate.
- Pour the melted chocolate mixture into the egg mixture. Stir together.
- Then, add in the vanilla, cocoa powder, and tapioca flour. Stir together.
- Stir in more chopped chocolate if desired.
- Transfer the brownie batter to the parchment-lined pan. Smooth into an even layer.
- Bake for 24 to 27 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Finally, remove the Paleo brownies from the oven. Cool fully before slicing into.

- Whisk the eggs and coconut sugar vigorously. This helps create a beautiful shiny top on the brownies.
- If you have a hand mixer or stand mixer, that works even better.
- If needed, replace the melted coconut oil with melted butter.
- You may need to quickly microwave the melted coconut oil and chocolate so that it becomes fully melted and creamy. There should be no chunks of chocolate left.
- Do not overbake the brownies. Insert a toothpick into the center. The brownies are done if it comes out mostly clean with only a few moist crumbs.
- Allow the brownies to fully cool before slicing into.
- Store at room temperature in an airtight container for up to 4 days.
- Freeze for up to 1 month.
