Paletas de Fresa (Strawberries & Cream Popsicles)

Paletas de Fresa combine fresh strawberries with cream and milk to create smooth, creamy popsicles with a vibrant strawberry flavor. The strawberries are macerated with sugar to release their natural juices before blending with dairy for a rich texture. Frozen into molds, these popsicles offer a refreshing treat that's both fruity and creamy, suitable for warm days or dessert.

Description

Paletas de Fresa (Strawberries & Cream Popsicles) start by macerating sliced fresh strawberries with granulated sugar, which softens the fruit and draws out its juices. After blending the strawberries and their juice until smooth, the mixture is combined with heavy cream and milk to create a rich, creamy base. The popsicle mixture is poured into molds and frozen until solid. This process results in popsicles with a balanced, sweet strawberry flavor complemented by the smooth creaminess of the dairy.

The texture of these popsicles is velvety and soft compared to traditional icy fruit popsicles because of the cream content, making them melt smoothly on the tongue. The natural sweetness from the macerated strawberries enhances the flavor without the need for excess added sugar.

To serve, run the popsicle molds briefly under cool or lukewarm water to release the frozen treats easily. For added texture, you can reserve some strawberry slices to add into the molds before freezing. These popsicles are best enjoyed fresh from the freezer for a cool and creamy fruity snack.

Ingredients

Servings
  • 1 pound strawberries sliced, fresh
  • ½ cup granulated sugar
  • ½ cup heavy cream
  • ½ cup milk (nonfat or 2%)

Instructions

  1. Add the sliced strawberries and sugar to a medium bowl. Gently toss to coat, cover, and set aside for 30 minutes to macerate and draw out the juices.
  2. Add the macerated strawberries and all the juices to a large blender and puree until smooth.
  3. Add the heavy cream and milk. Pulse the mixture a few times in the blender until mixture is combined.
  4. Pour the mixture into the popsicle mold. Cover, add popsicle sticks, and freezer for 6 hours, or until fully frozen.

Notes

  • Run the bottom of the popsicle molds under cool or lukewarm water for a few minutes to loosen the paletas before removing.
  • Reserve slices from about 3 strawberries if you wish to add fresh fruit pieces inside the popsicles for extra texture.
