Craving a big pancake breakfast but short on time? This easy pancake in a mug is the perfect breakfast treat for one, and it's ready in just 5 minutes!

Ingredients
- ½ cup flour
- 1 tablespoon sugar
- ½ teaspoon baking powder
- ½ teaspoon cinnamon optional
- ¼ teaspoon salt
- ⅓ cup milk
- 1 tablespoon melted butter
- 1 teaspoon vanilla extract
Instructions
- Spray an 8oz mug with cooking spray
- Add the flour, sugar, baking powder and salt to the mug and stir together
- Pour in the milk, melted butter and vanilla and whisk until combined (some lumps are ok)
- Microwave for 1 ½ minutes, check for doneness, and microwave an additional 15 seconds if necessary
- Serve with fresh berries and maple syrup
