Panna Cotta

Panna Cotta is a creamy dessert made with gelatin, heavy cream, sugar, and vanilla. It sets into a smooth, delicate custard with a rich texture and subtle vanilla flavor. The gelatin provides a gentle firmness while keeping the dessert silky. This recipe involves softening gelatin, heating cream and sugar until boiling, then blending with vanilla and gelatin before chilling to set. The panna cotta can be unmolded onto plates and topped with fresh fruits or sauces for serving.

Description

This Panna Cotta recipe combines heavy cream, sugar, and gelatin to create a set custard with a creamy texture and mild vanilla taste. After softening the gelatin in cold water, it is fully dissolved and mixed into hot cream and sugar. Vanilla bean paste or extract adds aromatic flavor. The mixture is poured into ramekins and chilled until firm. The dessert is unmolded by warming the ramekins briefly in hot water, yielding a smooth custard that holds its shape.

With a delicate mouthfeel and balanced sweetness, this panna cotta can be served plain or with fresh fruit toppings or sauces. It makes an elegant finish to a meal and offers a gentle vanilla flavor and creamy texture from the heavy cream.

Ensuring the gelatin is completely dissolved before chilling helps achieve a smooth set. Allowing the mixture to cool to room temperature before refrigeration prevents condensation on the dessert surface. The chilling period is at least four hours for proper firmness.

Ingredients

  • 1 1/2 Tablespoon water cold
  • 2 teaspoons gelatin unflavored
  • 2 cups heavy cream
  • 1/4 cup sugar
  • 2 teaspoons vanilla bean paste (or extract)

Instructions

  1. Start by sprinkling gelatin into a bowl with water and let stand for 1 minute to soften. If you want to ensure the gelatin is completely dissolved, place in a saucepan and heat over low heat until gelatin is dissolved.
  2. In a large saucepan, bring heavy cream and sugar to a boil over medium-high heat. Whisk often. Once it begins to boil, remove from heat and whisk in gelatin mixture and vanilla. I love to use vanilla beans, vanilla bean paste, or pure vanilla extract.
  3. Divide the cream mixture into four 1/2 cup ramekins. Let the mixture come to room temperature before putting in the refrigerator.
  4. Cover and let chill for at least 4 hours to allow time to set-up.To serve and invert on a plate, dip ramekins into a bowl of hot water for several seconds. Run a knife along the edge of each ramekin and invert onto the center of a serving plate.
  5. Top with your favorite fresh fruits or sauce.
