Ingredients

  • 10 black peppercorns crushed
  • 60 ml white wine vinegar ¼ cup
  • 60 ml dry white wine ¼ cup
  • 2 eschalot peeled and finely chopped, large
  • 3 tbsp tarragon finely chopped, fresh
  • 2 tbsp chervil finely chopped, fresh
  • 3 egg at room temperature, yolk
  • 125 gms butter at room temperature and cubed, ½ cup
  • 1 tbsp tarragon extra, finely chopped, fresh
  • 2 passion fruit
  • salt to taste
  • ground black pepper to taste

Notes

  • Bearnaise sauce is usually served warm.
