Description
This recipe starts by creaming room temperature butter with granulated sugar before beating in eggs, milk, and vanilla extract, yielding a smooth wet base. Dry ingredients of all-purpose flour, baking powder, baking soda, and salt are sifted and gently folded in, preserving lightness. Chopped fresh peaches are then carefully folded into the batter to keep their texture intact.
The batter is portioned into lined muffin tins and baked at 400°F (200°C) until golden and risen, usually 20-25 minutes. Once cooled, a vanilla glaze made from powdered sugar, vanilla, and water is drizzled over to add a sweet finishing touch that balances the fruit.
The resulting muffins have a moist crumb with tender peach pieces providing bursts of flavor in each bite. The vanilla glaze adds an extra layer of sweetness and visual appeal while remaining light.
Ingredients
- ½ cup granulated sugar white, 100g
- ⅓ cup butter at room temperature
- 2 egg
- ¾ cup milk 175ml
- 2 teaspoons vanilla extract
- 1 ½ cups all-purpose flour aka plain flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda aka bicarb of soda
- ¼ teaspoon salt
- 1 cup peach about 3 peaches, chopped fresh
For the vanilla glaze
- 5 tablespoons powdered sugar icing sugar
- 1 teaspoon vanilla extract
- 1 teaspoon water
Instructions
- Preheat the oven to 400ºF/200ºC. Line a 12-hole muffin pan with paper cases.
- Beat the butter and sugar together until smooth, then beat in the eggs, one at a time. Beat in the milk and vanilla. Hint: it might ‘split’ slightly at this stage, but don’t worry, it will come together with the dry ingredients.
- Sift the flour, baking powder, baking soda and salt into the bowl and stir gently to combine.
- Gently fold in the peaches.
- Spoon into the muffin cases to ¾ full. Bake for 20-25 mins until the peach muffins are risen and golden. Allow to cool on a wire rack.
- For the vanilla glaze, mix the ingredients together until smooth with a thick drizzle consistency. Add a little more sugar to thicken or water to thin. Drizzle over the completely cooled muffins.
