Peaches and Cream (and Cognac!)

Peaches and Cream with Cognac is a simple dessert featuring sliced fresh or canned peaches soaked briefly in cognac, then chilled and topped with lightly whipped cream. The combination offers a balance of sweet, soft fruit with a boozy aroma and rich, creamy topping. This refrigerated treat works well for an easy yet elegant finish to a meal.

Description

Peaches and Cream (and Cognac!) highlights ripe peaches sliced and soaked in a moderate amount of cognac or other quality brandy, allowing the fruit to macerate and absorb the liquor's warmth and aroma. This soaking process, which requires at least thirty minutes of refrigeration, mellows the peaches and infuses them with flavor. The dessert is finished by pouring fresh cream over the fruit, which can be lightly whipped if desired to add body while remaining pourable.

The flavor is a gentle interplay of ripe fruit sweetness and creamy richness contrasted by the cognac's subtle warmth. The texture combines tender peach slices softened by soaking with smooth cream. This dish is uncomplicated and quick to assemble, making it suitable as a light, cool dessert option.

If peaches are not very sweet, a small sprinkle of sugar can be added before macerating. Using fresh peaches when in season ensures the best flavor and texture. The cream can be lightly whipped to thicken it slightly while still maintaining a pourable consistency.

Ingredients

Servings
  • 2 peaches fresh, ripe (or canned peaches equivalent to 1 small peach per serving)
  • 1 oz cognac or brandy, good quality
  • 2 oz fresh cream (double cream in the UK, in the US, beat lightly for a thicker consistency)

Instructions

  1. Cut the peaches into slices and place in a serving bowl. Then, pour some cognac over the fruit (as much or as little as you like).
  2. REFRIGERATE FOR AT LEAST HALF AN HOUR to let the fruit macerate. (If your peaches aren't very sweet or flavorful, add a tiny sprinkle of sugar).
  3. When you're ready to serve, just pour some cream on top of the peach slices.

Notes

  • If fresh cream is very liquid, lightly whip it to thicken slightly while keeping it pourable.
  • Add a small sprinkle of sugar if your peaches are not sweet enough before macerating.
  • Use ripe fresh peaches for best natural sweetness and texture; canned peaches can be used as a substitute in smaller quantities.
