  • 12 egg
  • cup milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 12 lices Canadian bacon (Peameal Bacon, or regular bacon, or ham or sausage patties)
  • 2 tablespoon butter melted, unsalted
  • 12 slider buns (Sweet Hawaiian rolls or dinner rolls)
  • 6 lices cheddar cheese

Instructions

  1. Preheat the oven to 350˚F. Lightly coat an 8-inch square baking dish or sheet pan with cooking spray (optional, line with parchment paper).
  2. Whisk the eggs, milk, salt and pepper in a medium bowl. Pour into the pan and bake until puffed and set, 10 to 15 minutes, or until set and cooked through. Let cool slightly.
  3. Meanwhile, heat a large skillet over medium heat and coat with cooking spray or oil. Add the peameal bacon and cook, until lightly browned, about 2-3 minutes per side. Set aside.Note: if using regular bacon, ham, or sausage patties, cook according to package directions.
  4. Carefully slice the slider buns in half and set the tops aside. Place a layer of the cooked peameal on the bottom of the buns.
  5. Carefully lift cooked egg out of the pan with spatulas and place it on top of the bacon. Top the egg layer with the slices of cheese to cover completely.
  6. Place the top half of the buns on top and brush melted butter on the buns.
  7. Bake in oven for 5 minutes to heat and toast bread. Enjoy!
