Ingredients
- 12 egg
- ⅓ cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 12 lices Canadian bacon (Peameal Bacon, or regular bacon, or ham or sausage patties)
- 2 tablespoon butter melted, unsalted
- 12 slider buns (Sweet Hawaiian rolls or dinner rolls)
- 6 lices cheddar cheese
Instructions
- Preheat the oven to 350˚F. Lightly coat an 8-inch square baking dish or sheet pan with cooking spray (optional, line with parchment paper).
- Whisk the eggs, milk, salt and pepper in a medium bowl. Pour into the pan and bake until puffed and set, 10 to 15 minutes, or until set and cooked through. Let cool slightly.
- Meanwhile, heat a large skillet over medium heat and coat with cooking spray or oil. Add the peameal bacon and cook, until lightly browned, about 2-3 minutes per side. Set aside.Note: if using regular bacon, ham, or sausage patties, cook according to package directions.
- Carefully slice the slider buns in half and set the tops aside. Place a layer of the cooked peameal on the bottom of the buns.
- Carefully lift cooked egg out of the pan with spatulas and place it on top of the bacon. Top the egg layer with the slices of cheese to cover completely.
- Place the top half of the buns on top and brush melted butter on the buns.
- Bake in oven for 5 minutes to heat and toast bread. Enjoy!
