  • 1 1/2 banana about 3 large, ripe, mashed
  • 1/3 cup yogurt 0% fat, plain, Greek
  • 1/3 cup peanut butter creamy
  • 3 tablespoons butter melted and cooled
  • 2 egg large
  • 1/2 cup brown sugar
  • 1/4 cup coconut palm sugar or granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup white whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground allspice
  • 1/4 cup peanuts chopped, dry roasted

Instructions

  1. Preheat oven to 350°F. Line a muffin pan with liners or grease a loaf pan(s).
  2. In a large bowl beat together bananas, yogurt, peanut butter, melted butter and eggs until well combined. Beat in sugars.
  3. In a medium bowl whisk together flours, baking soda, salt, cinnamon and allspice. Add to banana mixture and beat until blended.
  4. Pour into prepared pans and sprinkle with chopped peanuts. Bake.
  5. Muffins will take 20-25 minutes, mini loafs 25-30 and large loaf 60 minutes. Test by inserting a toothpick in the center. It's done if it comes out clean.
