Description
The Peanut Butter Energy Bites feature a blend of rolled oats and coconut flakes for chewiness, mixed with creamy peanut butter and ripe banana as binders. The addition of brown flax seed, chia, and hemp seeds boosts texture and fiber content. Sweetened naturally with honey, the mixture is pulsed to combine before folding in dairy-free milk chocolate chips for discreet pockets of sweetness. Rolled into small balls, they firm up after chilling, providing dense, portable snacks suitable for an energy boost throughout the day.
This recipe is adaptable for varied tastes by swapping in other nut or seed butters and adding spices, dried fruits, or nuts. The bites keep fresh in an airtight container in the refrigerator for up to two weeks or can be frozen for up to three months, making them convenient for advance prepping. Vegan versions are also possible by using maple syrup or dates in place of honey.
Ingredients
- 1 cup rolled oats
- ¾ cup coconut flakes
- ½ cup peanut butter
- 1 banana ripe
- 2 honey 3 tablespoons
- 3 tbsp. brown flax seed whole
- 1 tbsp. chia seeds
- 1 tbsp. hemp seed
- 1 tbsp. vanilla
- ¼ cup milk chocolate chips dairy-free
Instructions
- In a food processor, add ALL of the ingredients except the dark chocolate chips. Pulse until combined.
- Transfer to a medium-sized bowl.
- Fold in the milk chocolate chips.
- Use a small scoop or use a spoon to scoop into “ping-pong” size balls, approximately 2 tbsp. worth.
- Roll the energy bites out with your hands until smooth.
- Set all bites onto a plate with parchment paper.
- Add extra coconut flakes or dark chocolate chips on top.
- Refrigerate for 30 – 45 minutes then transfer to an airtight container in the fridge.
