Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1/2 cup chocolate chunks or chips
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon espresso powder
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1/2 cup peanut butter
  • 1/3 cup powdered sugar

Instructions

  1. Preheat oven to 400 degrees. Line muffin tin with papers.
  2. Add flour, sugar, chocolate chunks, cocoa powder, baking soda, and espresso powder to a large bowl. Whisk to combine.
  3. Add sour cream, milk, vegetable oil, egg, and vanilla to a medium bowl and whisk well to combine.
  4. Pour wet ingredients into dry ingredients and stir until combined.
  5. In a small bowl, stir together the peanut butter and powdered sugar with a fork until well combined and smooth.
  6. Spoon muffin batter into muffin liners, filling just 1/3 of the way full. Top with a small spoonful of peanut butter mixture. Top with more muffin batter to fill 3/4 of the way full.
  7. Bake for 15 minutes or until a tester comes out mostly clean, with just a few moist crumbs.
  8. Cool completely. Drizzle with additional melted peanut butter before serving, if desired.
