Ingredients
- 1 cup quick cook steel cut oats
- 1/3 cup slivered almonds
- 2 pears, peeled and diced
- 1 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/4 teaspoon kosher salt
- 1 1/4 teaspoon baking powder
- 2 1/3 cups unsweetened vanilla almond milk or milk of choice
- 1/2 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 1/4 cup honey or maple syrup
- 1 egg

Instructions
- Preheat oven to 375° F. and spray a 9x9 baking dish with cooking spray.
- In a large bowl whisk together the oats, almonds, cinnamon, cardamom, salt, and baking powder. In a separate bowl whisk together the almond milk, extracts, honey, and egg.
- Pour the wet ingredients into the dry and stir together. Stir in the pears.
- Pour the oatmeal mixture into the prepared baking dish and place on the middle rack of the oven. Bake for 50-60 minutes or until the oatmeal is golden and set. Serve immediately.
