Pear and fennel salad with apples and mustard vinaigrette

This salad features thinly sliced fennel, Bartlett pears, and Honeycrisp apples dressed with a sharply tart vinaigrette made of lemon juice, olive oil, and grainy mustard. The natural sweetness of the fruit balances the tangy dressing, while reserved fennel fronds add a fresh herbal touch as a garnish. The crisp textures and bright flavors make it a refreshing and light salad choice.

Description

The Pear and fennel salad with apples and mustard vinaigrette combines tender-crisp slices of fennel bulb, sweet Bartlett pears, and crisp Honeycrisp apples. The vinaigrette is made by emulsifying lemon juice, olive oil, and grainy mustard, deliberately omitting sweeteners since the fruit provides adequate natural sweetness. This approach creates a tart and lively dressing.

The thin slicing of the fennel, pears, and apples ensures the salad has a delicate texture with harmonious layering of flavors. The fennel fronds are cut separately and sprinkled on top, adding a light anise-like aroma and visual appeal. This simple salad highlights the fresh, clean flavors of its components without heavy dressings.

This salad suits a starter or side dish to a variety of meals, particularly during seasons when pears and apples are in harvest. It requires minimal preparation and can be served immediately for best texture and taste.

Ingredients

Servings
  • 1 fennel head
  • 1-2 bartlett pears
  • 1 honeycrisp apple
  • lemon juice of ½ lemon
  • 2 TBs olive oil
  • ½ TB grainy mustard
  • salt
  • black pepper

Instructions

  1. Wash apples, pears and fennel thoroughly. Thinly slice apples, pears and fennel, saving the fronds for later.
  2. In a glass mason jar, mix lemon juice, olive oil and mustard (notice that I’ve omitted the traditional sweetener in this vinaigrette – the apples and pears are going to give us all the sweetness we want, so I wanted to keep the sauce extra tart). Seal the jar and shake it well to emulsify the vinaigrette.
  3. Heap your fennel slices on a large serving platter. Top with thinly sliced apples and pears. Drizzle all of your vinaigrette on top. Finally, cut your fennel fronds into small bunches, and arrange them on top.
