Penne Arrabbiata

Penne Arrabbiata is an Italian pasta dish featuring penne coated in a spicy tomato sauce made from garlic, crushed red pepper flakes, tomato paste, and canned crushed tomatoes. The sauce simmers to develop bold flavors with a hint of heat balanced by a touch of sugar. Fresh basil and Parmesan cheese top the dish for aromatic and savory notes.

Description

This recipe prepares a fiery tomato sauce by gently sautéing thinly sliced garlic with red pepper flakes in olive oil, then incorporating tomato paste for depth and crushed tomatoes for body. Salt, black pepper, and granulated sugar adjust the flavor balance while simmering allows the sauce to thicken and meld.

The pasta is cooked to al dente and combined with the sauce to absorb the bold, spicy flavors. Fresh chopped basil adds a fragrant herbal brightness, and serving with Parmesan cheese enhances the overall richness and umami.

Penne Arrabbiata serves as a hearty, warming main course with a spicy edge. It is well suited for pasta lovers who appreciate a moderate heat level and bright tomato taste. The sauce can be paired with crusty bread or a simple salad to complete the meal.

Ingredients

Servings
  • 1/4 cup olive oil
  • 6 cloves garlic sliced very thin
  • 3/4 teaspoon red pepper flakes crushed
  • 2 Tablespoons tomato paste
  • crushed tomatoes 28 ounce can
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon granulated sugar
  • penne pasta 16 ounce box
  • 1/2 cup basil fresh, chopped
  • Parmesan Cheese for serving

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Add garlic and chili flakes and cook for 1 to 2 minutes, stirring frequently, until garlic is fragrant and just starting to soften. Stir in the tomato paste.
  2. Add in the crushed tomatoes, salt, pepper, and sugar and bring to a steady simmer. Reduce heat to medium-low and continue cooking for 15 minutes - stirring occasionally. In the meantime, make your pasta.
  3. Fill a large pot with water and a dash of salt. Place over a medium-high heat and bring water to a rolling boil. Add penne and cook for 8 to 9 minutes, or until pasta is al dente. Drain pasta well.
  4. Stir the cooked pasta into the sauce. Add in the basil and stir well to combine.
  5. Serve pasta warm, with plenty of grated Parmesan cheese!
