Roasting at 325 degrees uncovered for 2.5 to 3 hours slowly cooks the beef, with guide temperatures for removing at medium-rare (135°F), medium (140°F), or medium-well (145°F), verified using a meat thermometer. A rest period of 15 minutes under foil allows juices to redistribute for a juicier cut.

The pepper crust creates a textured, flavorful bark contrasting the roast's rich interior. This roast is suitable for slicing thinly for sandwiches, dinner plates, or roasting buffets where a pepper-forward beef option is desired.

  • 1 tablespoon vegetable oil
  • 1 tablespoon black pepper coarse ground
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 4 pounds beef eye round roast boneless

Instructions

  1. Preheat oven to 325 degrees.
  2. Mix the black pepper, salt and garlic powder in a small bowl.
  3. Rub the roast with the oil then (with a dry hand) season the roast with the black pepper mixture all over the roast.
  4. Bake, uncovered, 2-1/2 to 3 hours.
  5. Use a meat thermometer to remove at the right time for desired doneness. If you want medium-rare remove roast at 135 degrees, for medium remove roast at 140 degrees and for medium-well remove roast at 145 degrees.
  6. Let sit for 15 minutes lightly covered with foil before slicing.
