Peri-peri chicken livers
Description
Starting with butter melted in a very hot skillet, chicken livers are cooked until golden on both sides, developing a crisp exterior while remaining tender inside. Crushed garlic and peri-peri sauce are then added to infuse the pan with aromatic and spicy notes. A splash of fresh lemon juice adds brightness, and cream is stirred in to create a silky sauce. Seasoned with salt and black pepper, the dish simmers briefly to combine flavors. The dish is naturally rich from the liver and cream, balanced by the acidity and heat from lemon and peri-peri.
Serving with crusty bread allows soaking up the sauce and complements the robust flavors. This dish works well as a starter or a modest main when paired with simple sides.
Ingredients
- 2 tablespoons butter
- 500 g (1lb) chicken liver cleaned and trimmed
- 3 garlic crushed, cloves
- 3-4 tablespoons peri-peri sauce
- lemon juice of 1
- ½ cup cream
- salt to taste
- black pepper to taste
- parsley to serve, chopped
- bread to serve, crusty
Instructions
- In a very hot skillet/frying pan, melt the butter and fry the chicken livers until golden brown on both sides.
- Add the garlic and peri-peri sauce and allow to fry for another minute until fragrant then add the lemon juice and cream.
- Season with salt and pepper and allow to simmer for 5-7 minutes.
- Serve with crusty bread.
