- 125 ml water ½ cup, lukewarm
- 25 gms lard 0.9 oz
- 25 gms sugar 0.9 oz
- 5 gms salt ¾ tsp
- 5 gms dry yeast 2 tsp
Filling
- 350 gms ricotta cheese ¾ lbs
- 210 gms granulated sugar 0.45 oz
- 35 gms dark chocolate chips 1.25 oz
- 1/2 tsp vanilla essence optional
- 1 pinch salt
Alchermes Syrup
- 40 gms water 1.4 oz
- 35 gms sugar 1.25 oz
- 40 gms alchermes 1.4 oz
- red food colouring optional

- If you cannot find Alchermes, which is red, you can use Rum and add some red food colouring to it… it won’t taste exactly the same, but it will still taste good and look great!
