Pie Maker Meat Pies

If I could choose just one pie to make in my pie maker forever, it would be pie maker meat pies. Beef is pressure cooked with red wine before being tossed in tomato paste and Worcester sauce. Loaded into mini pies with a puff pastry lid it’s the ultimate pie maker recipe.

Ingredients
Pie Crust
- puff pastry sheet
- 650 g Beef Stewing Steak
- 240 ml Frozen Beef Stock Pot
- 1 medium white onion
- 1 Tsp Frozen Chopped Garlic
- 240 ml red wine
- 1 Tbsp extra virgin olive oil
- 4 Tsp worcester sauce
- 4 Tbsp tomato paste/puree
- salt & pepper

Instructions
- Place your instant pot on sauté and when it warms up add your extra virgin olive oil and your meat and start browning the meat.
- Add in the garlic and the onion, sauté until the onion is starting to soften and then deglaze the instant pot with your red wine.
- Add in salt, and pepper and then stir in half the tomato paste and half the Worcester sauce. Place a frozen stock cube in the middle and place the lid on the instant pot.
- Set the valve to sealing, cook for 40 minutes followed by a 15 minute natural pressure release.
- Drain the meat from the liquid and place the liquid in a bowl. Stir in the rest of the Worcester sauce and the tomato paste.
- Roll out your pie crust bottom (made of homemade shortcrust pastry) and the puff pastry lid. Then place the shortcrust bottom into the pie maker.
- Add the filling and then press down the puff pastry lid. Snip the top of the pie with scissors to allow your pie to breathe as it cooks.
- Brush with egg wash and then place the lid down on your pie maker and cook for 10 minutes or until golden.
Notes
- Stock – What I do is make a lot of stock in my instant pot and then freeze it into foil containers and then I can cook the stock from frozen in the instant pot. You can see it in action in our instant pot chicken stock recipe. Or you can use any stock you have of the same quantity.
- Leftovers – You can skip the making of the meat pie filling in the instant pot if you are using leftovers. Then simply toss in the Worcester sauce and the tomato paste. Perfect for making Monday pies with your leftover Sunday roast beef.
- Variations – You can use any cubed beef, lamb, venison, pork etc in this recipe.
