Crunchy and spicy, pikliz is a typical Haitian condiment, mainly composed of julienned cabbage and carrots, pickled in vinegar.

Ingredients
- 3 Scotch bonnet peppers
- 1 cup shredded cabbage
- ½ cup shredded carrots
- ¼ onion , finely chopped
- ¼ cup peas , frozen
- 2 whole cloves
- ½ teaspoon salt
- 5 black peppercorns
- 3 cups distilled vinegar
Instructions
- Cut the stem of the Scotch bonnet peppers, cut into 4 pieces and keep the seeds.
- Place the peppers, cabbage, carrots, onions, peas, cloves, salt, and peppercorns in a jar, then add the vinegar.
- Close the jar tightly and let stand for at least 24 to 48 hours before using.
- Once opened, the pikliz can be kept in the refrigerator for several months.
