Description

The Piña Colada Granita begins by blending pineapple cubes, coconut water, and sugar until smooth and the sugar dissolves. This mixture is combined with coconut milk and cream of coconut for richness and creamy coconut flavor. The mixture is poured into a metal pan and frozen.

During freezing, the granita is scraped every 30 minutes to break up ice crystals, promoting a slushy, flaky texture rather than a solid block of ice. This process continues for about four hours until the granita achieves a soft, icy consistency. Coconut flakes can be sprinkled on top before serving for added texture and visual appeal.

  • 3 cups pineapple cubed, fresh
  • 1 cup coconut water
  • ½ cup sugar
  • 1 cup coconut milk light
  • cup cream of coconut
  • coconut flakes optional, for topping

Instructions

  1. In a blender, place the first 3 ingredients and process until smooth and the sugar dissolves.
  2. Add this mixture to a metal pan plus the coconut milk and cream of coconut. Stir with a whisk.
  3. Place in the freezer and after 30 minutes, break up the crystals that have formed. Using the tines of a fork, rake & stir the mixture every 30 minutes, scraping edges and breaking up any chunks as the mixture freezes, until granita is slushy and frozen, about 4 hours.
  4. When is ready to serve, rake a fork through the granita one last time, add your toppings, and enjoy!
