Pineapple Beef Taco Recipe with Poblano Salsa

This recipe features seasoned ground beef cooked with diced poblano peppers and onions, topped with a fresh pineapple poblano salsa made from tomatoes, cilantro, lime, and pineapple. Served on warm tortillas with queso fresco and cilantro lime sour cream, these tacos balance savory, smoky, and sweet flavors and offer a contrast of textures.

Description

The Pineapple Beef Taco Recipe with Poblano Salsa starts by preparing a spice blend including cumin, chili powder, garlic powder, salt, and pepper. Part of the poblano peppers and onions are combined with diced tomatoes, cilantro, pineapple tidbits, and lime juice to make a fresh salsa. The remaining peppers and onions are sautéed with ground beef seasoned with the taco spices until fully cooked and slightly caramelized, releasing pineapple juice towards the end to add subtle sweetness.

The assembled tacos consist of tortillas filled with savory, spiced beef and topped generously with the fruity salsa, queso fresco cheese, and cilantro lime sour cream, which adds creaminess and tang. This combination offers layers of smoky spice, fresh acidity, sweet pineapple, and creamy cooling elements with each bite.

These tacos make a flavorful meal suitable for casual dinners or gatherings. The pineapple salsa is prepared in advance and provides vibrant fruitiness that contrasts nicely with the hearty beef filling. Warm tortillas help hold the mixture together and add a soft, chewy component.

Ingredients

Servings
  • 1 red onion finely diced, divided
  • 2 large poblano pepper seeded and diced, divided
  • 4 Roma tomato seeded and diced
  • ½ cup cilantro roughly chopped
  • 1 oz can pineapple tidbits drained and juice reserved, in pineapple juice
  • 1 lime sliced into wedges
  • 1 tablespoon canola oil
  • kosher salt to taste
  • black pepper to taste, fresh cracked
  • 24 oz ground beef lean
  • 12 tortillas
  • 1 cup queso fresco brand Cacique
  • ¾ cup sour cream cilantro lime flavor, brand Cacique

Taco Seasoning

  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoons kosher salt
  • teaspoon black pepper fresh cracked

Instructions

  1. In a small dish, combine taco seasoning spices and mix until uniform, set aside.
  2. In a medium-sized bowl, combine 3 tablespoons of the diced onion, ¾ cup diced poblano, diced tomatoes, cilantro, pineapple, and a hearty squeeze of lime juice. Toss gently to combine and set aside.
  3. Heat canola oil in a large skillet over medium-high heat. Add the remaining onion and poblano, season with salt, pepper, and half of the taco seasoning, and cook until lightly softened, about 3 minutes.
  4. Add the ground beef to the pan and continue to cook, crumbling the beef as it cooks. Sprinkle with remaining taco spices and cook until no longer pink, about 5 minutes. Stir in the reserved pineapple juice and cook until most of the liquid has burned off, about 3 minutes. Adjust seasoning as desired and remove pan from heat.
  5. Divide meat between tortillas and top with pineapple poblano salsa, Cacique Queso Fresco and Cilantro Lime Sour Cream. Enjoy!
