Pineapple Cucumber Salad

This Pineapple Cucumber Salad combines juicy pineapple chunks, fresh blueberries, creamy avocado, and crisp cucumber with a tangy lime and sweet chili dressing. The mix of textures and vibrant flavors offers a refreshing option perfect for a light lunch or an accompaniment to grilled dishes. The inclusion of jalapeño adds a mild kick, balanced by the sweetness of maple syrup and the bite of soy sauce for umami depth.

Description

The Pineapple Cucumber Salad brings together ripe pineapple pieces, English cucumber slices, red onion, jalapeño, avocado, radishes, blueberries, red bell pepper, cilantro, and green onions to create a colorful and varied salad. The dressing, made from lime juice, olive oil, sweet chili sauce, maple syrup, soy sauce, and minced garlic, gives the salad a sweet, tangy, and slightly spicy profile. The salad is tossed gently to coat all ingredients evenly and refrigerated to meld the flavors before serving. The combination of juicy fruit, crunchy vegetables, and creamy avocado provides both texture contrast and a refreshing taste experience that works well as a standalone dish or as a topping or side.
