Pineapple Meatballs Recipe

These pineapple meatballs combine lean ground beef and pork with breadcrumbs and seasonings to form flavorful, tender meatballs baked to a golden brown. The sauce is a sweet and tangy blend of pineapple chunks, BBQ sauce, soy sauce, rice vinegar, and ginger, simmered to a thick consistency. Topped with green onions, they balance savory meat with bright fruit sweetness, ideal for casual meals or appetizers.

Description

The Pineapple Meatballs Recipe mixes equal parts lean ground beef and pork with breadcrumbs, milk, and aromatic seasonings including garlic and onion powders. Formed into medium-sized balls and baked until browned, the meatballs offer a firm yet tender texture that holds up well in sauce.

The accompanying pineapple sauce combines canned pineapple drained juice with BBQ sauce, soy sauce, rice vinegar, and grated ginger, simmered until thickened. This sauce delivers a sweet-savory profile with a slight tang and warmth from the ginger. Adding pineapple chunks back to the sauce provides bursts of fresh fruit flavor.

Serving the meatballs tossed in the warm pineapple sauce and garnished with chopped green onions adds freshness and contrast. The dish works as a main course for an informal dinner or as party appetizers. Using oven baking makes preparation easy and hands-off.

Ingredients

Servings

Meatballs

  • 1 lb ground beef lean
  • 1 lb ground pork lean
  • 1 cup breadcrumbs can be gluten-free
  • ½ cup milk can be unsweetened dairy-free milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • ½ teaspoon chili flakes optional

Pineapple Sauce

  • 20 ounce pineapple chunks can
  • 1 cup BBQ sauce
  • ¼ cup soy sauce can be gluten-free
  • ¼ cup rice vinegar
  • 1 tablespoon ginger grated
  • green onions chopped, to serve

Instructions

  1. Preheat your oven to 400 degrees. Line a baking sheet with parchment paper.
  2. Mix the meatball ingredients in a large bowl. Form the meat into 1 ½ inch balls - a medium-sized cookie scoop works great for this. Place the meatballs onto the baking sheet and bake for 15-20 minutes, or until they're browned and cooked through.
  3. While the meatballs are cooking, make the sauce. Drain the can of pineapples into a large, high-sided frying pan. Add the BBQ sauce, soy sauce, vinegar, and ginger. Bring to a simmer over medium heat then continue to simmer until the sauce reduces and is as thick as BBQ sauce.
  4. When the meatballs have finished cooking, add them to the sauce. Add the pineapple chunks to the pan and let them warm for a few minutes. Serve the Hawaiian meatballs with some chopped green onions over the top.
