Description
Pizza Sauce starts by gently sauteing minced garlic in extra virgin olive oil to release its aroma, followed by stirring in tomato paste to deepen the tomato flavor through light cooking. Crushed tomatoes are then stirred in off the heat to avoid overcooking, bringing freshness and acidity to the sauce. Basil and oregano, either fresh or dried, add herbal notes characteristic of traditional pizza.
The sauce is seasoned with freshly ground salt and black pepper to taste. It can be heated through when used as a dip or spread directly over pizza dough before baking. The texture is thick enough to spread easily without being watery, maintaining a rich tomato character enhanced by the garlic and olive oil base.
This pizza sauce keeps well refrigerated for up to 5 days and freezes for up to 3 months, making it convenient to prepare in advance. Variations include adjusting acidity with a pinch of sugar if tomatoes are too tart or adding red pepper flakes for a spicy kick. Additional herbs like thyme, rosemary, marjoram, or fennel seed can be included for a more complex flavor profile. Pairing this sauce with fresh pizza dough completes a homemade pizza experience.
Ingredients
- 1 1/2 Tbsp extra virgin olive oil
- 2 tsp garlic minced
- 3 Tbsp tomato paste
- 1 (15 oz) can crushed tomatoes
- 2 Tbsp basil or 1 tsp dried, chopped, fresh
- 1 1/2 tsp oregano or 1 1/2 Tbsp chopped fresh, dried
- salt freshly ground
- black pepper freshly ground
Instructions
- Heat olive oil in a medium saucepan over medium heat.
- Add garlic and saute 10 seconds, then add tomato paste and stir garlic in.
- Cook and stir for 1 minute, spreading paste along bottom of pan and stirring while cooking.
- Remove from heat, stir in crushed tomatoes, oregano, fresh basil and season with salt and pepper to taste.* If using as a dip then heat sauce through.
- Spread over pizza dough or store in the fridge up to 5 days or freeze up to 3 months.
Notes
- Adjust acidity by adding a pinch of sugar if the tomatoes taste too tart.
- Add red pepper flakes for a subtle spicy heat if preferred.
