Description
This Pizzelle recipe combines all-purpose flour, baking powder, kosher salt, eggs, granulated sugar, anise and vanilla extracts, and melted butter to create a smooth batter. The batter is cooked in a preheated pizzelle iron—sprayed with cooking spray—until crisp and lightly browned. The cooking requires approximately 35-45 seconds per pizzelle depending on the iron, with removal by fork to a wire rack to cool. Once cooled, a light dusting of confectioners sugar can be added for a subtle sweetness.
Pizzelle cookies have a crisp, delicate texture complemented by the licorice-like flavor of anise. The anise extract is the defining flavor, but it may be substituted with orange or lemon extracts for variety. These thin cookies are traditionally served with espresso or as a light dessert in Italian cuisine.

- 3 1/2 cups (455g) all-purpose flour
- 4 teaspoons (16g) baking powder
- 1/2 teaspoon kosher salt
- 6 large egg at room temperature
- 1 1/2 cups (300g) granulated sugar
- 4 teaspoons (18g) anise extract
- 2 teaspoons (9g) vanilla extract
- 1 cup (226g) butter melted, and at room temperature, unsalted
- 1/4 cup (28g) confectioners sugar optional, for dusting

Instructions
- Preheat the pizzelle iron and in a medium-sized bowl combine the flour, baking powder, and salt.
- In a large bowl, whisk the eggs, sugar, anise, and vanilla until smooth, then add the butter and whisk until combined.
- Fold the flour mixture into the egg mixture just until blended taking care to not overmix.
- Spray the pizzelle iron with the cooking spray and using a cookie scoop, add approximately 2 tablespoons worth of the batter into each mold and close the lid.
- Follow the manufacturer's instructions for cooking (Palmer's is 35-45 seconds or until steaming stops). Use a fork to remove and transfer the pizzelle to a wire rack to cool and repeat the process with the remaining batter.
- Once cooled, dust the pizzelle with the confectioner's sugar, if desired.
