Pizzelle
Description
Pizzelle cookies are made from a batter combining flour, sugar, melted butter, eggs, baking powder, and a flavoring such as anise or vanilla extract. The batter is portioned into a hot pizzelle iron, which resembles a waffle maker and stamps the dough into a decorative wafer cookie with a crisp texture.
The brief cooking time creates a delicate cookie that is golden brown, thin, and crisp. Cooling on racks is essential to prevent sogginess. Various extracts can be used for flavor variations, and the cookies can be dusted with powdered sugar for presentation.
The recipe yields about 36 cookies, often served in groups as a light snack or with coffee. Proper storage at room temperature in layers separated by parchment paper helps maintain crispness, and freezing is possible to extend shelf life with secure packaging to prevent breakage.
Notes recommend using a good pizzelle iron and provide alternatives to anise flavoring. Storage tips include best practices to keep pizzelle crisp and how to freeze them safely.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 3/4 cup butter melted and cooled
- 4 egg
- 1 tablespoon anise or vanilla extract (see note 2)
- 2 teaspoons baking powder
Instructions
- Preheat pizzelle iron and lightly coat with nonstick cooking spray.
- In a large bowl, combine flour, sugar, butter, eggs, anise or vanilla extract, and baking powder. Drop slightly rounded tablespoons of batter on to pizzelle iron and close.
- Bake as directed by manufacturer or until golden brown, 30 seconds to 1 minute. Using a nonstick spatula, remove each pizzelle to a cooling rack; repeat with remaining batter.
- Cool completely and dust with powdered sugar if desired.
Notes
- Using a dedicated pizzelle iron, like the Cuisinart Pizzelle Press, produces consistent, decorative cookies.
- Anise extract is traditional, but vanilla or almond extracts are good alternatives; lemon oil can be used but is stronger than lemon extract.
- Yield is about 36 cookies, served typically in portions of three.
- Store cookies at room temperature layered between parchment or wax paper to keep crisp for up to two weeks.
- Freeze cooled pizzelle in sturdy containers with parchment paper layers to avoid breakage; freeze up to two months.
