Pizzelle
Description
This pizzelle recipe creates crisp and lightweight cookies using a batter of eggs, granulated sugar, milk, melted butter, vanilla, flour, and baking powder. The batter is spread onto a pre-greased pizzelle iron heated to medium-high and cooked for about 30 seconds until golden and cooked through. The quick cooking time preserves a tender center while crisping the edges.
The resulting pizzelle have a slightly sweet vanilla flavor and a delicate, wafer-thin texture with embossed traditional designs from the iron. Once removed from the iron, the cookies cool on a flat surface to harden further before serving. Sprinkling with powdered sugar adds a touch of sweetness without overwhelming the flavor.
Adjusting batter amount and cooking time allows customization of cookie thickness and doneness to personal preference. Pizzelle can be served as an elegant snack or paired with coffee or tea.
Ingredients
- 4 egg
- 1 cup granulated sugar
- 2 tablespoons milk
- 3/4 cup butter melted
- 1 tablespoon vanilla extract
- 2 1/4 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon vegetable oil
- 2 tablespoons powdered sugar
Instructions
- Whisk together the eggs, sugar, milk, melted butter and vanilla until smooth.
- Use a sifter to add the flour and baking powder to the batter. Mix the batter until it is smooth and there are no lumps.
- Brush a pizzelle iron with oil until lightly coated. Make sure to brush the top and bottom plates of the pizzelle iron.
- Place about a tablespoon of batter at the center of each pizzelle pattern in the pizzelle iron and close the lid.
- Let the batter cook for around 30 seconds and lift the lid. The pizzelle should be cooked through and golden.
- Every pizzelle iron is different. You can adjust the amount of batter or cooking time to make your perfect pizzelle.
- When each pizzelle is cooked, carefully remove it from the pizzelle maker and lay it on a flat surface to cool and harden.
- Sift powdered sugar over the pizzelles just before serving them.
Notes
- If cookies cook unevenly, add batter slightly toward the back (hinged side) of the center pizzelle pattern to encourage even spreading when the lid closes.
- Use a wooden skewer to carefully remove hot pizzelle from the iron to avoid burns.
- Steam stopping from the iron indicates the cookies are fully cooked and ready to remove.
