Pollo Al Horno

Pollo Al Horno features oven-baked chicken thighs or breasts seasoned with a blend of ancho chile, chipotle pepper, garlic, onion powder, and brown sugar for a smoky, slightly sweet crust. The spices combine with olive oil to coat the chicken, which is baked until cooked through and rested to retain juiciness. The seasoning mix creates a flavorful outer layer with balanced heat and warmth, enhanced by resting for optimal tenderness.

Description

Pollo Al Horno is a baked chicken dish that uses bone-in, skin-on thighs or breasts seasoned with a mixture including ground chile ancho, chipotle pepper, garlic and onion powders, brown sugar, and herbs. The chicken is coated in olive oil and then evenly covered in the spiced rub before baking in a casserole dish at 375°F until it reaches a safe internal temperature. Baking at this moderate temperature allows the chicken skin to crisp while keeping the meat moist.

The spice combination yields a nuanced flavor profile with smoky, sweet, and mildly spicy notes. Resting the chicken after baking helps redistribute juices, making the meat juicier and more tender. This technique enhances the eating experience by preventing dryness.

Given the straightforward preparation, Pollo Al Horno can be a satisfying main entrée accompanied by simple sides like rice, vegetables, or a fresh salad. It’s practical for home cooks aiming for a flavorful, rustic baked chicken dish.

Patting the chicken dry before seasoning is important to achieve crisp skin. Checking doneness with a thermometer ensures safety and proper cooking, avoiding overcooking. Allowing the chicken to rest about 5 minutes after baking improves juiciness.

Ingredients

Servings
  • 1 pound chicken thighs bone-in with skin or chicken breast, 464 g
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 teaspoon ground chile ancho or smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon chipotle pepper
  • 1 teaspoon dried coriander or parsley
  • ½ teaspoon red pepper flakes
  • 2 Tablespoons olive oil

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Pat dry your chicken breast and add them to a medium-sized mixing bowl.
  3. In a small bowl add the salt, pepper, smoked paprika, garlic powder, onion powder, sugar, chipotle powder, oregano, and red pepper flakes. Stir to combine and set aside.
  4. Drizzle the olive oil over the chicken thighs and use a wooden spoon, spatula, tongs, or your hand to mix and evenly coat the chicken.
  5. Add the spice mixture over top. Using your wooden spoon, spatula, tongs, or your hands stir to combine and evenly coat the spice mixture.
  6. Place your seasoned chicken thighs in a 7 x 9 casserole dish.
  7. Bake your chicken at 375 degrees F (190 degrees C) for 30-35 minutes or until your thermometer reads 165 degrees F (74 degrees C).
  8. Allow to rest for 5 minutes before serving. The thigh meat will be juicier if you allow it to rest.

Notes

  • Dry the chicken thoroughly with paper towels before seasoning to promote crispy skin.
  • Allow the chicken to rest for 5 minutes after baking to retain juices and enhance tenderness.
  • Use a meat thermometer to confirm the internal temperature reaches 165°F (74°C) for safe consumption.
