Poncho’s Mexican Buffet Sopapillas

Poncho’s Mexican Buffet Sopapillas are golden fried dough pieces made from a simple dough of flour, salt, baking powder, sugar, shortening, and milk. Rolled thin and cut into diamonds, they puff evenly when fried in hot oil. The resulting sopapillas have a soft interior and crisp exterior. They can be served sprinkled with cinnamon sugar and honey.

Description

This recipe for Poncho’s Mexican Buffet Sopapillas starts with a dough combining all-purpose flour, salt, baking powder, sugar, shortening, and milk to a soft consistency. After allowing the dough to rest for 30 to 60 minutes, it is rolled out to a quarter inch thickness and cut into diamond shapes.

Fried in approximately one inch of hot vegetable oil at 375°F, the dough pieces are quickly turned to enable even puffing and browning on both sides. The frying yields sopapillas that are light, puffy, and slightly crisp on the outside with a tender interior.

Sopapillas are commonly enjoyed sprinkled with cinnamon sugar and drizzled with honey for sweetness. They work as a dessert or a snack with a pleasant combination of textures and mild sweetness.

Ingredients

Servings
  • 4 cups all-purpose flour
  • 1 1/4 teaspoons salt
  • 3 teaspoons baking powder
  • 3 tablespoons sugar
  • 2 tablespoons shortening
  • 1 1/4 cups milk
  • vegetable oil for frying

Instructions

  1. Sift flour, measure, and sift again with the salt, baking powder, and sugar. Cut in the shortening, and add milk to make a soft dough just firm enough to roll. Cover bowl and let dough stand for 30 to 60 minutes; then roll 1/4 inch thick on lightly floured board and cut in diamond-shaped pieces.
  2. Heat about 1 inch of oil in a frying pan to about 375 degrees. Add a few pieces at a time, so that you do not cool the oil too quickly. Turn at once so they will puff evenly, then turn back to brown both sides. Drain on paper towels.
  3. You may want to sprinkle with cinnamon and sugar before eating. Serve with honey.
