Portobello Mushroom Burgers

Ingredients

Servings
  • 4 large portobello mushrooms see note
  • 2 tablespoons olive oil
  • 2 teaspoons soy sauce
  • 1 teaspoon Worcestershire sauce 
  • 1 clove garlic minced
  • salt and black pepper to taste
  • 3 ounces havarti cheese sliced

For serving

  • 4 hamburger buns or brioche buns
  • toppings as desired

Instructions

  1. Wipe the mushrooms clean with a damp paper towel and remove and discard the stems. Use a spoon to gently scrape out the gills.
  2. In a large bowl whisk olive oil, soy sauce, Worcestershire sauce, garlic, and salt & pepper to taste. Add the mushrooms and toss well to coat. Let marinate at least 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. Place the mushrooms, gill side down on the grill, and cook for 5 to 7 minutes. Flip the mushrooms over and cook for an additional 4 to 5 minutes or until tender. Add the cheese on top and cook a minute more or until melted.
  5. Place the mushrooms in the buns and add toppings as desired.

Notes

  • To bake: roast the mushrooms, gill side down in a 400°F oven for 20 to 25 minutes.
  • *If your portobello mushrooms are small, use 8 mushrooms and double them up on your burger.
