Ingredients

  • 2 cups potato mashed
  • 3 egg beaten, large
  • 1 cup cheddar cheese shredded
  • 3 tablespoons chives finely chopped
  • salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 400°F. Grease a muffin tin with non-stick spray.
  2. In a large bowl, combine mashed potatoes, eggs, cheddar cheese, and chives. Season with salt and pepper to taste.
  3. Spoon the potato mixture into the prepared muffin tin, filling each cup to the top.
  4. Bake in the preheated oven for 25-35 minutes until the tops are golden and puffs are set.
