Queso Fundido with Mushrooms and Hatch Green Chile

This molten cheese dip is topped with a mouthwatering mixture of sautéed shiitake mushrooms and green chiles. This queso is made with two cheeses (queso quesadilla and queso Oaxaca) combined with an irresistible mixture of sautéed mushrooms and Hatch green chile. If you can’t find Hatch chiles, substitute with Anaheim chiles, which are available in most grocery stores. Serve this queso with warm corn or flour tortillas.

Ingredients

  • 2 Hatch chile peppers roasted and peeled, or 3
  • 2 tablespoons butter unsalted
  • 5 ounces shiitake mushrooms Private Selection golden oak, sliced
  • 1/4 cup onion white, chopped
  • 8 ounces Queso Quesadilla shredded, or asadero cheese
  • 8 ounces queso Oaxaca shredded
  • 2 tablespoons cilantro chopped
  • 6 corn tortilla warmed, or flour tortillas

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cut off the stems and remove the seedpods from the chile peppers. Cut into ¼-inch-wide strips about 2 inches long.
  3. Melt butter in a large skillet and add onion and cook for 1 minute.
  4. Add mushrooms, and cook until mushrooms begin to soften for about 5 minutes.
  5. Place the cheese and strips of chile over the cooked mushrooms.
  6. Place skillet in the oven and bake uncovered for about 10 to 12 minutes or until cheese is completely melted and slightly golden brown on top.
  7. Sprinkle with fresh cilantro.
  8. Serve with corn or flour tortillas.

Notes

  • If you are unsure how to roast chile peppers, please refer to this blog post: How to roast chile peppers.
  • If you don't have access to Hatch peppers, you can use Anaheim, Poblano or even canned roasted green chiles instead
  • If you don't have access to Oaxaca or Quesadilla cheeses, feel free to substitute any other melty cheese instead (ex: Monterey Jack, Chihuahua).
  • Make ahead tip: This can be prepared a couple hours ahead then popped in the oven when it's fiesta time.
