Quick Cilantro Lime Marinade

Ingredients

  • ¼ cup lime juice
  • 2 tablespoons olive oil divided
  • ¼ cup cilantro chopped, fresh
  • ½ teaspoon cumin ground
  • 1 garlic grated, small clove
  • ¼ teaspoon salt
  • 1 ½-2 lbs chicken breast boneless

Instructions

Make the marinade:

  1. Add lime juice, 1 tablespoon olive oil, chopped cilantro, cumin, garlic, salt, and chicken breasts to a large zip bag.
  2. Let chicken marinate for 15-20 minutes in the fridge.

Cook the chicken:

  1. In a large skillet over medium-high heat, heat up the remaining olive oil.
  2. Place the chicken breasts on a skillet and cook, for 5-7 minutes on each side, until the chicken is cooked through at an internal temperature of 165F. Discard chicken marinade.⁠
  3. Remove the chicken and let it rest 5 to 10 minutes before slicing and serving.

Notes

  • This recipe yields enough marinade for to 2 lbs of chicken. 
  • Take things to the next level by topping your cilantro lime chicken with homemade avocado salsa.
