Description
To make Quick Pickled Onions, combine apple cider vinegar, water, maple syrup or another sweetener, and sea salt in a bowl, whisking until dissolved. Thinly sliced red onions are placed in a jar and the pickling liquid poured over them until fully covered. Allowing the mixture to rest uncovered at room temperature for one hour softens the onions and develops their tangy, sweet flavor.
These pickled onions add brightness and crunch to salads, sandwiches, tacos, or grilled foods. Their balance of acidic and sweet notes lifts flavors and provides contrast. They can be refrigerated in their liquid for up to two weeks, making a versatile, quick condiment.
Ingredients
- ½ cup apple cider vinegar
- 1 cup water
- 1 Tablespoon maple syrup coconut sugar or any sugar you have on hand
- 1 ½ teaspoons salt sea salt
- 1 red onion thinly sliced
Instructions
- Add vinegar, water, sugar and salt to a bowl and whisk together until the sugar and salt have dissolved.
- Place onion slices in a mason jar.
- Pour vinegar mixture on top, making sure all onion slices are covered with liquid. Let mixture sit at room temperature for 1 hour before covering and placing in the fridge.
- Store in the liquid in the refrigerator for up to two weeks. Use a fork or slotted spoon to remove the onions from the liquid before using.
