Ingredients

  • 2 tsp olive oil
  • 1 lb ground beef 92% lean
  • 1 small red onion diced & divided
  • 1 jalapeños diced & divided
  • 1 ½ cups bell pepper divided, diced
  • 1 packet ranch seasoning
  • 1 bag romaine lettuce
  • 1 avocado medium sized
  • ½ cup cherry tomato diced

Garnish with

  • lime squeeze of fresh
  • Jalapeño Sauce or dressing of choice, homemade creamy
  • tortilla chip crushed

Instructions

  1. Prepare a non-stick pan over medium heat with olive oil or cooking spray.
  2. Add ground beef, diced jalapeños, diced white onion, ½ cup diced bell peppers and packet of ranch seasoning. Combine together until ground beef is cooked (7-10 minutes).
  3. While beef cooks, dice the rest of your produce. I use a vegetable chopper to finely dice the remaining peppers, red onions, and tomatoes. Thinly slice avocado.
  4. Pour romaine into a large salad bowl. Then, add in diced produce and ground beef mixture from the pan.
  5. Add your dressing and fresh squeeze lime juice over the top of the salad. Toss. Garnish with diced cilantro, crunchy tortilla chips, and Creamy Jalapeno Dressing.

Notes

  • Prepare the creamy jalapeño dressing as specified or substitute with jalapeño ranch or ranch mixed with hot sauce.
  • Keep salad components separate when storing; add dressing, chips, and avocado only before serving to keep them fresh.
