Description

This recipe begins by slicing large eggplants into quarter-inch thick pieces. A batter is mixed from whole milk (or water), cornstarch, eggs, black pepper, and salt, creating a medium-thick coating for the eggplant slices. The slices are dipped in this batter before frying.

  • 2 eggplant cut into ¼ inch-thick [½ cm] slices, large
  • 2 tablespoons whole milk or water, or skim milk
  • 4 tablespoons cornstarch
  • 2 egg or 3 medium ones, large
  • ¼ teaspoon black pepper freshly-cracked or ground
  • ¾ teaspoon salt
  • 1 cup cooking oil for frying

Instructions

1. Making the batter

  1. Combine milk (or water), cornstarch, eggs, a pinch of pepper and a teaspoon of salt. Mix well. Dip the eggplants in this mixture.

2. Fry

  1. In a frying pan heat 3 tablespoons of oil. Fry the eggplant slices until they turn golden brown, pouring a bit of the batter around them. Add oil by the tablespoons whenever needed.Rest on a paper towel to soak excess oil.

3. Serve

  1. Use as a side dish, or meat substitute in your lunch, serve freshly fried.
