Ingredients

  • 1 medium pineapple fresh
  • 6 cups watermelon cubed, seedless
  • 1 pound strawberries
  • 1 pint blueberries
  • 1 pint blackberry
  • 1/3 cup feta cheese crumbled
  • 1/4 cup mint about 8 leaves, fresh, roughly chopped
  • 3 tablespoons honey
  • 1/3 cup lemon juice (about 2 lemons)

Instructions

  1. Remove the peel and core 1 medium fresh pineapple. Cut it into 1/2-inch thick strips and use a small star-shaped cookie cutter to cut out stars. If you don't have a star cookie cutter, simply dice into bite-sized cubes.
  2. Prepare 6 cups cubed seedless watermelon and hull and slice 1 pound strawberries.
  3. Add your prepared fruit to a large serving bowl along with 1 pint blueberries, 1 pint blackberries, 1/3 cup crumbled feta cheese, and 1/4 cup roughly chopped fresh mint.
  4. In a small bowl, microwave 3 tablespoons honey for 10 to 15 seconds to liquify. Whisk in 1/3 cup lemon juice, then pour over the fruit. Stir to combine.
  5. Cover the bowl with a lid or plastic wrap and refrigerate until ready to serve.
