The salsa is pulsed in a food processor to a desired consistency, leaving some tomato chunks for texture. The mixture is chilled before serving, offering a fresh, slightly spicy condiment perfect for pairing with warm tortilla chips.

Description

The recipe combines a can of premium San Marzano tomatoes with two cans of Ro-Tel tomatoes that include diced tomatoes and peppers, adding heat and flavor complexity. Fresh chopped onion, minced garlic, and chopped seeded jalapeño contribute pungency and mild spiciness. Seasonings include a small amount of sugar, kosher salt, ground cumin, and chopped cilantro, which add balance, saltiness, and herbal freshness.

The ingredients are coarsely pulsed in a food processor until some chunky tomato pieces remain, maintaining a thicker, textured salsa typical of homemade styles. This preparation ensures the salsa is not overly pureed and keeps a pleasant mouthfeel. After mixing, it's chilled and allowed to rest so flavors meld.

Ingredients

  • 1 oz. can tomato San Marzano are best, whole, with juice
  • 2 cans ro-tel we use 1 can mild, 1 can original, tomatoes with peppers
  • ¼ cup onion chopped
  • 1 clove garlic minced
  • 1 fresh jalapeño seeded and chopped
  • ½ teaspoon sugar
  • 1 teaspoon kosher salt
  • ½ teaspoon cumin ground
  • ¼ cup cilantro chopped (use more, if desired)
  • 1 lime juiced, about 1 tbsp

Instructions

  1. Place all ingredients in a large food processor (or blender).  This can also be done in batches if using a smaller processor.
  2. Pulse to get desired consistency.  We like ours still with some tomato chunks left. This usually takes about 10 pulses. 
  3. Taste with a tortilla chip and adjust seasoning, to taste. 
  4. Store in an air-tight container in the fridge, preferably for at least 1 hour, or longer. 
  5. Serve with warm tortilla chips!
