Restaurant-Quality Salsa
Description
The recipe combines a can of premium San Marzano tomatoes with two cans of Ro-Tel tomatoes that include diced tomatoes and peppers, adding heat and flavor complexity. Fresh chopped onion, minced garlic, and chopped seeded jalapeño contribute pungency and mild spiciness. Seasonings include a small amount of sugar, kosher salt, ground cumin, and chopped cilantro, which add balance, saltiness, and herbal freshness.
The ingredients are coarsely pulsed in a food processor until some chunky tomato pieces remain, maintaining a thicker, textured salsa typical of homemade styles. This preparation ensures the salsa is not overly pureed and keeps a pleasant mouthfeel. After mixing, it's chilled and allowed to rest so flavors meld.
This salsa is suitable for serving with warm tortilla chips as a party snack or accompaniment to Mexican dishes. Adjusting the seasoning to taste is recommended to suit individual preferences. The fresh jalapeño adds a controlled heat level, which can be modified by removing seeds.

- 1 teaspoon kosher salt
