Riguas are delicious corn cakes from El Salvador, which are wrapped in a banana leaf before being cooked.

Ingredients
- 20 oz. sweet corn kernels
- ½ tablespoon sugar
- 2 tablespoons butter
- banana leaves
- salt (to taste)

Instructions
- Mix the corn kernels with the salt, sugar and butter until a liquid batter of lighter color is obtained.
- Cut the banana leaves into 4 pieces of about 12 x 12 inches (30 x 30 cm).
- In the center of each cut banana leaf, place 2 tablespoons of riguas batter then, fold the leaf in 2, leaving the batter inside.
- Heat a lightly greased pan or griddle over low heat.
- Place one or more banana leaves stuffed with the batter, in the center of the pan or griddle and cook for 5 minutes on each side until it hardens without burning it.
- Repeat the operation until all the riguas are cooked.
- Enjoy immediately.
