Riguas

Riguas are delicious corn cakes from El Salvador, which are wrapped in a banana leaf before being cooked.

Ingredients

Servings
  • 20 oz. sweet corn kernels
  • ½ tablespoon sugar
  • 2 tablespoons butter
  • banana leaves
  • salt (to taste)

Instructions

  1. Mix the corn kernels with the salt, sugar and butter until a liquid batter of lighter color is obtained.
  2. Cut the banana leaves into 4 pieces of about 12 x 12 inches (30 x 30 cm).
  3. In the center of each cut banana leaf, place 2 tablespoons of riguas batter then, fold the leaf in 2, leaving the batter inside.
  4. Heat a lightly greased pan or griddle over low heat.
  5. Place one or more banana leaves stuffed with the batter, in the center of the pan or griddle and cook for 5 minutes on each side until it hardens without burning it.
  6. Repeat the operation until all the riguas are cooked.
  7. Enjoy immediately.
