Perfectly seasoned roasted baby potatoes have a crispy edge and tender center. They're easy to cook in the air fryer or oven and the incredible flavor of parmesan and garlic make them a crowd-pleasing side dish!

Ingredients
- 1 ½ pounds baby potatoes cleaned and dried
- 2 tablespoons oil of choice
- 2 tablespoons butter melted
- 1/4 cup grated Parmesan cheese
- ½ teaspoon EACH Italian seasoning, garlic powder, salt, black pepper
Instructions
Air Fryer Instructions:
- Preheat the air fryer to 400 degrees Fahrenheit and set the timer to 15 minutes.
- While the air fryer heats up, cut each potato in half or forth.
- To a large bowl, add the olive oil, melted butter, Parmesan cheese, and seasoning. Whisk to combine. Add the potatoes to the bowl and toss to combine until all the potatoes are fully coated in the mixture.
- Add the potatoes to the air fryer and cook for 15 minutes, shaking halfway through, or until the potatoes are golden and crispy on the outside, and soft on the inside.
- Remove from the air fryer and top with more parmesan cheese if desired. Serve immediately!
Oven Instructions:
- Preheat the oven to 450 degrees Fahrenheit. Line a baking sheet with foil or parchment paper and set aside.
- While the oven heats up, cut each potato in half or forth.
- To a large bowl, add the olive oil, melted butter, Parmesan cheese, and seasoning. Whisk to combine. Add the potatoes to the bowl and toss to combine until all the potatoes are fully coated in the mixture.
- Transfer the potatoes to the baking sheet and bake for 20 minutes or until the outside is golden and crispy and the inside is soft and cooked through.
