This healthy vegetable side dish is the perfect addition to any meal. Roasted broccoli takes minutes to prep and you just need a few ingredients for this delicious vegan side.

Ingredients
- 1.5 lbs broccoli cut into florets of even size
- 2-3 garlic cloves minced
- 2-3 Tablespoon extra virgin olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 425 F and line a baking sheet with parchment paper or aluminum foil.
- In a large bowl, toss broccoli florets and minced garlic with olive oil, season with salt and pepper.
- Arrange florets in a single layer on a baking sheet and roast for about 15 minutes, until broccoli is fork tender and lightly browned. Taste and adjust seasoning of necessary. Serve warm
Notes
- Cut the florets into similar sizes so that they cook evenly.
- Don't overcrowd the florets on the baking sheet. If you do they will steam and get soggy rather than roast.
- The broccoli should be fork tender when you remove it from the oven.
