Roasted Cauliflower with Lemon Dressing
Description
This recipe prepares whole cauliflower broken into florets and coated with olive oil before roasting at 400°F for about 30 minutes. The roasting process softens the cauliflower while producing browned, caramelized spots that deepen the flavor and add a pleasant texture contrast.
The accompanying lemon dressing combines garlic, freshly squeezed lemon juice, a splash of olive oil, and salt, whisked together before being poured over the warm roasted cauliflower. This dressing balances the rich, roasted flavor with zest and brightness, and a hint of pungency from the garlic.
After mixing, the cauliflower can be served warm as a simple vegetable side. The ingredients keep this dish straightforward and highlight the natural qualities of cauliflower enhanced by the lemon dressing.
