The seasoned vegetables are spread in an ovenproof dish and roasted at 200ºC (400ºF) for 30-40 minutes until softened inside and crisp and golden outside.

  • 6 potato Cubed
  • 1 large onion chopped
  • 1 tsp smoked paprika
  • 1 tsp oregano dried
  • 4 prigs thyme fresh
  • 2-3 tbsp olive oil
  • ½ cup mozzarella cheese grated
  • chives to serve

Instructions

  1. Pre-heat the oven to 200ºc/400ºF. 
  2. Combine all the ingredients, except for the cheese and chives, in a large bowl and mix well. 
  3. Transfer to an oven-proof dish and place in the oven. Bake for 30-40 minutes or until cooked through, crisp and golden. 
  4. Top with the cheese and bake until just melted then scatter over the chives and serve.
