Description

Roasted Sweet Potato Salad with Spinach and Grapes brings together hearty roasted sweet potatoes with bright, fresh ingredients like baby spinach and grapes. The sweet potatoes are cubed and roasted until golden and tender, lending a rich, slightly caramelized flavor that anchors the salad. Thinly sliced red onion and dried cranberries add layers of sharpness and sweetness, while creamy diced avocado offers a mellow contrast.

The dressing combines mayonnaise, fresh lime juice, and optional sriracha and cayenne, creating a zingy and mildly spicy sauce that binds the ingredients without overwhelming them. Tossed together, the salad balances warm roasted vegetables with cool fresh produce and a lively dressing.

Serving this salad alongside your favorite entree complements many meals, providing a nutritious and colorful side dish with diverse textures from creamy to crisp and soft. Optional crumbled goat cheese adds a tangy richness that can enhance the overall flavor experience.
