Roasted Sweet Potatoes are an easy and delicious way to get a side of sweet potatoes on the table for the holidays or any night of the week!

Ingredients
- 1 tablespoon olive oil
- 2 large sweet potatoes, washed, peeled, and cut into 1/2-inch cubes
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Preheat oven to 450°F and line a baking sheet with parchment paper.
- In a large bowl, toss all the ingredients together until the potatoes are coated.
- Evenly spread out the coated potatoes on the lined baking sheet.
- Bake for 30 minutes, flipping the potatoes halfway through. The potatoes should be golden brown.
- Broil the potatoes an additional 3-5 minutes, or until crispy.
- Serve immediately.
