Roasted Sweet Potatoes

Brown sugar roasted sweet potatoes are crispy on the outside and tender on the inside. Flavor and versatile, this fantastic recipe is ready in about 45 minutes!

Ingredients

  • 2 pounds sweet potatoes washed peeled and cut into 2 inch chunks
  • GLAZE:
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter melted
  • 2 tablespoons pure maple syrup or honey
  • 3 tablespoons light brown sugar tightly packed
  • 1/4 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper as needed
  • GARNISH:
  • chopped parsley

Instructions

  1. Preheat oven to 400 degrees F.
  2. Line a baking sheet pan with parchment paper and set aside.
  3. Combine all the GLAZE ingredients in a medium bowl.
  4. Place sweet potato chunks in a large bowl and pour the glaze on top. Toss to combine.
  5. Transfer potatoes onto the prepared baking sheet. Arrange in a single layer.
  6. Roast at 400F for 20 minutes. Use a spatula to turn the cake over and bake for another 10-20 minutes or until tender when pierced with a fork.
  7. Serve warm, garnished with parsley.
