Description
Rosemary Lemon Panna Cotta blends the richness of heavy cream and half-and-half with the herbal essence of fresh rosemary and the fresh brightness of lemon zest. The mixture is gently simmered to extract flavors, strained, then combined with sugar, vanilla, and gelatin dissolved in water. The gelatin allows the mixture to set into a creamy, tender dessert once chilled.
The panna cotta’s texture is smooth and slightly wobbly, with the rosemary imparting a faint pine-like aroma balanced by the citrusy lemon. Serving in individual glasses makes it an elegant dessert presentation, garnished simply with a lemon peel curl for added fragrance and visual appeal.
This dessert is best served well chilled and can be stored covered in the refrigerator for up to five days, making it suitable for advance preparation for gatherings or meals.
Ingredients
- 1 unflavored gelatin about 1 tablespoon, envelope
- 2 Tbsp. water cold
- 2 c. heavy cream
- 1 c. half-and-half or whole milk
- 1/3 cup sugar
- 2 tsp. vanilla
- 2 rosemary sprigs
- lemon zest of 1 large
Instructions
- In a small saucepan, sprinkle gelatin over water and let stand for 1 minute. Turn the heat to low and stir until the gelatin is dissolved. Remove from heat.
- Combine the heavy cream, rosemary sprigs, and lemon zest in a large saucepan. Set the heat to medium-low and let simmer for five minutes. Strain out the rosemary and lemon zest and discard. Stir in the sugar and half-and-half or whole milk. Turn the heat to medium-high and bring to a very low boil, stirring continuously.
- Remove the pan from heat and stir in the gelatin mixture and vanilla extract. Pour into 8 wine glasses or other decorative containers.
- Chill, covered, at least 4 hours or overnight. Garnish with a curl of lemon peel.
Notes
- Store the panna cotta covered in the refrigerator to maintain freshness for up to 5 days.
